Fishy Tacos

I have to admit, I had some problems with this one. The cream sauce was wonderful, I got it from the Food Network. But i had some problems with the fish, it lost its flavor with the cream sauce... any ideas on how to give it a better flavor? But it was still good and my husband liked it, of course its no Pedros (which my brother in law got me hooked on).

Ingredients:
Fish Batter-
- 1 cup flour
- 1 tsp salt
- 1/2 tsp ground black pepper
- 1-2 cup buttermilk

Cream Sauce:
- 1/3 cup mayonaise
- 2/3 cup sour cream
- Zest from 1 lemon
- 2 tbls fresh lemon juice
- water (to get to the consistancy you like)
- Salt and Pepper

Fish Tacos:
- Oil (for frying)
- 2 lbs skinned halibut in strips
- Corn tortillas
- shredded cabbage

For the Batter- Whisk flour, salt, pepper and buttermilk (to a pancake like consistency) in a bowl. Set aside and let rest for 15 mins

For Cream Sauce- Add mayonaise, sour cream, lemon zest, lemon juice and water (optional) into a bowl. Season to taste with Salt and Pepper.

For the Fish- In a large skillet, add enough oil to make 1 inch thick. Heat to 350 degrees. Dip fish pieces in batter and fry in hot oil until golden brown, about 5 mins. Transfer to paper towel to drain. Make tacos with Corn tortillas, fish, shredded cabbage and cream.

  1. Daniel and I eat fish tacos regularly (using fish sticks often) and for our cream sauce I use the following:

-Just a couple T of mayo
    -3/4 C sour cream
-Lime juice instead of lemon juice
    -2 tsp cajun seasoning
    -Cayenne pepper to taste

Our cajun seasoning has salt in it, so I don't add any extra salt. If you don't have cajun seasoning, maybe add some onion & garlic powder with cayenne pepper. Hope that helps!

I have to admit I am not the creator for most of these recipes! Most of these come from friends or the Foodnetwork, and other websites. I usually tweak it, but i get them from other sources. THANK YOU OTHER PEOPLE,but please... use them, circulate them, make them your own. Just make sure you give the credit to the right person, which isn't always me!
