Italian Turkey Burger

My husband absolutely loved these. He told me "Sometime you make food i like, and sometime you make food i love... I LOVE THIS!" The original recipe called for ground chicken, but when i went to the store they had just thrown out all their ground chicken and decided to stop carrying it the day before. STINK! but i decided to go with ground turkey... and it was on sale, 3lbs for $3.44. YAY! so i now have 6 lbs of this stuff i have never used, but it is healthier for you than ground beef i hear, so this is the 1st lb of that turkey! I found the idea at Paprika Red.

Ingredients:
- 1 cup panko bread crumbs (Kikkoman)
- 1 tbls Italian Seasoning
- 2 tbls grated Parmesan Cheese
- 1 lb ground turkey
- 1 egg
- 1 tbls chopped basil
- 1 tbls olive pil
- Salt and Pepper
- Buns
- Tomato
- Sliced Mozarella Cheese
- Lettuce
- Avacado/Mayonaise 

NOTE: I use Kikkoman Bread Crumbs. I have found that they dont fall apart as easy as some of the other brands.

First, make your seasoned breading. Mix the panko, dried seasoning, grated cheese, pinch of salt, and a pinch of pepper. Set aside.

In a medium sized mixing bowl, mix the turkey, egg, pinch of salt salt, and basil. Add about 1/4 cup of the bread crumb mixture, mixing gently, and careful not to overwork. Patties should hold together at this point; if you need a little more panko for it to hold it together, add about 1 TB. Shape it into 4 patties and dredge it in the panko mixture, pressing the panko into the chicken patties. You may have some panko left over.

In a large, nonstick skillet, heat the olive oil over medium heat. When hot, add the patties. Cook until medium golden brown on the bottom, and chicken appears cooked halfway up, about 4-5 minutes. Flip, and continue cooking until the other side is the same color, another 3 minutes or so more. (Now's a good time to put the buns in the toaster.) When bottoms are light golden brown, with about 1 minute to go, add a thin layer of cheese on the top, and let cheese melt.

Serve with Lettuce, Tomato and Avocado/Mayonnaise.
