Squash Soup

So my parents have been vegans for almost a year now... and when i went home last week i was a little nervous about what i would be eating... but i found some pretty good recipes. This is one of them. Its from a book called The pH Mircale and was super yummy. We switched it up a little and used yellow squash instead of butternut squash

Ingredients:
- 4 large yellow squashes, pealed and chopped
- 3 celery stalks, chopped
- 1 large onion, chopped
- 2 tbls olive oil
- 2-3 cups chicken broth
- Cinnamon/Nutmeg

heat oil in a large skillet. Add chopped squash, celery and onion and cook until soft (i added about 1 cup of the broth to help steam it a little). When soft, puree in blender and add Cinnamon and Nutmeg while blending (it will be hot so don't put the blender lid on tight). I added about 1 tbls cinnamon and maybe 1 tsp nutmeg... its really personal preference and you will just have to play with it. Warm in skillet and serve immediately.
