My husband has a wonderful little garden on our balcony that he has struggled with all summer long. Growing things in Pots is a lot harder than growing them in the ground... especially when you live in such a dry climate. I was super excited to make my first Vegetable Pizza, and to be able to use so many fresh ingredients. I found the idea for this from Better Homes and Gardens.
Ingredients:
- Pizza Dough (I used an Auntie Ann's Pizza Dough... YUMMY!)
- Cornmeal (if using pizza stone)
- 1 tbls Olive Oil
- 1/2 cup chopped peppers
- 3-4 tomatoes (depending on size), thinly sliced
- 1/2 yellow squash thinly sliced
- 1/2 medium onion, diced
- 1 cup shredded Mozzarella Cheese
- Ground Black Pepper
- Fresh Chopped Basil
Sprinkle Pizza Stone with cornmeal and place in Cold Oven. Preheat oven to 425°F and let Stone heat for 30 mins. Pull out stone and Press Pizza dough Onto stone, building up edges. Brush with olive oil. Bake in oven for 10 minutes.
Remove crust from oven. Arrange pepper, tomato slices, Onion, and squash on pizza crust. Sprinkle with cheese and black pepper.
Bake in the preheated oven for 5 to 10 minutes more or until cheese is bubbly. Sprinkle with basil.
