Momma's Focaccia Bread


Today was my new KitchenAid Mixer's Maiden Voyage! I decided to do a bread as its a lot easier when you don't have to actually do the work yourself (like i did for the bagels... and for the Cinnamon Rolls and any other bread I've made). Got this recipe from my Mother-in-Law... and its FABULOUS

Ingredients:
- 10 oz warm water
- 1 3/4 tsp yeast
- 3 tbls olive oil
- 1 1/4 tsp salt
- 1 1/2 tsp minced garlic (i use this kind that comes pre-minced and stays in the fridge)
- 1 1/2 tsp fresh chopped rosemary leaves
- 3 c flour (might need a little more)
- Cheese

Dissolve yeast in warm water.  Mix in rest of ingredients and use that wonderful kitchenaid to mix and knead for about 2-3 min.  Let rise (about 1/2 hour).  Pat into a flat loaf on a 9x13 greased pan (or i used parchment/wax paper to keep it from sticking).  Rise 30 min.  Drizzle with olive oil and sprinkle w/ cheddar cheese or any other kind of cheese. Bake at 400 degrees for 15-20 min.  

And then with that yummy bread I made these for dinner...
I just used the bread, put some cooked chicken breast (pounded thin) and mozzarella cheese in it and stuck it in my George Foreman to make a little Panini. Then I added the lettuce and Avocado/Ranch mixture after it cooked. So So good!
