Blueberry Fruit Roll-Ups

My husband and I are big fans of our local farmers market, and one of our favorite things to buy is the blueberries. I have never had such fresh juicy and flavorful blueberries before... but one can only eat so many blueberries before they go bad. So when i found this recipe at Our Best Bites i knew what to do with all my left over fruit!

Ingredients:
- 2 1/2- 3 cups of ripened fruit (or slightly overly ripened)
- honey or sugar to sweeten (i used honey)
- 2 tsp lemon juice

Preheat oven to lowest temperature.  140° or higher (mine went to 170).  Puree all ingredients in a food processor or blender until smooth.  Pour onto a baking sheet lined with plastic wrap, or a silicone baking mat (don’t use foil, parchment, or waxed paper), and spread to 1/8″ thick.  Place in oven and bake for 6-8 hours, until center is not tacky anymore.  Remove from oven and peel off of baking sheet.  Cut into strips and roll in parchment or plastic.  Store in airtight container or freeze.
If using plastic wrap, it will shrink a little as the fruit dries, so do leave a little extra around the edges.

I have to admit I am not the creator for most of these recipes! Most of these come from friends or the Foodnetwork, and other websites. I usually tweak it, but i get them from other sources. THANK YOU OTHER PEOPLE,but please... use them, circulate them, make them your own. Just make sure you give the credit to the right person, which isn't always me!
