Taco Rice

 
This comes from my mother in law-- we pretty much love it and it makes amazing leftover!
Ingredients:
- 1 lb ground beef
- 1 medium onion finely chopped
- 1 chopped bell pepper (green, red or mix)
- 1/2 cup rice
- 1 pkg Taco Seasoning
- 1 can tomato sauce (6-8 ounces)
- 1 cup water
- Tortilla chips
- Sour cream
- Shredded cheddar cheese
- Shredded lettuce
- Salsa 

Cook the ground beef in large skillet until browned and drain grease. Add chopped onion and bell peppers and cook.

Add water, tomato sauce, taco seasoning and rice to skillet with beef. Cover and cook until rice is done (you may need to add a little more water if gets dry)

Serve taco rice over tortilla chips and top with your favorite taco toppers: Sour Cream, Cheese, Lettuce, Salsa, etc.
